Morten Kornbech Larsen is the man behind the licorice success from Bagsværd. A success that is built from the ground up based on a great product, but not without challenges!
For Morten and his team have developed a really tasty licorice, which generally just tastes of more. But with the success in the sale of the licorice, the challenges in the production came with the following and getting the same product every time. The basis for the production of the licorice was for a long start-up period a manual process with heavy pots and gas burners. For a long time, Morten was looking all over the world for a suitable kettle with the necessary options so that they could produce their products more easily. After a long search and testing of other methods, Morten found that he really should not look so far for his solution, which today gives him and his team these all-important options;
High temperature
Morten’s licorice production requires high heat to achieve the right caramelization. When they make their licorice, they should like to have the heat up around 150 ° C, and there are very few kip pots that allow this. With the induction kettle, Morten and his team had the opportunity to work up to 200° C. and thus they could easily obtain the desired heat to give the licorice its uniqueness!
Precise temperature control
Not only do licorice need a high temperature, at the same time the temperature must also be very precise so that they can ensure a uniform process when working with their mass with high sugar content. Therefore, the control is with 1° C. precision is also an important parameter for Morten. The safety of knowing how much heat was transferred to the product helps to give the same consistency every time!

Due to their previous manual production, they had unfortunately experienced fluctuating quality of their products, but also here the induction kettle gave a clear advantage. For the combination of the built-in agitator and the precise heat of the induction, Morten and his team provide the opportunity to control the process precisely – especially the fact that the heat stops immediately when they turn off the induction, Morten is incredibly happy. This means that his licorice does not overcook or become too dark before they get it out of the kettle!

It helps to ensure the best working position of his employees throughout their working day.
