Kettles

Before the installation and commissioning, this manual must be read carefully as it provides important safety information when installing and using the kettle. This operating manual must be kept carefully and accessible to the various users, who must be able to consult it as needed.

The kettle is designed with the greatest possible consideration for the environment. Both during production and during operation. The kettle is well insulated on all sides for minimal heat loss. When heating with induction, there is a minimal mass that must be heated at each batch and thereby minimal energy waste. The agitator is equipped with energy saving motor class IE3. The following signs and symbols are used on the kettle and in the operating instructions.

The kettle is intended for professional use in connection with cooking in commercial kitchens and similar purposes. The kettle must not be used for other purposes.

Check that the kettle is delivered according to the agreed specifications and without damage. Should this not be the case, contact your dealer immediately for a dialogue on this.

The kettle may only be lifted according to the manufacturer’s instructions.

In generel –
The device may only be installed and dismantled by skilled staff.
The kettle may only be installed indoors and in rooms with floor drains.
It is recommended, to establish a floor well in reference to the installation of the kettle.

– Handling –
Do not move the kettle while it is in use or while it is hot.
Do not use the kettle as a ‘scaffolding’ or climbing point to get to a possible hood, as it may be damaged.

– Electrical installation –
The supply voltage is checked against the rating plate.
The kettle’s supply voltage has narrow tolerances: Nominal + 6% -10%.
It is important not to expose the kettle to over- or under-voltage!
To mount the connecting cable, disassemble the front and mount the cable directly on the supply separator.

Leave the cable as long as the cassette with the separator can
lifted out to access the induction generator(s) at the rear. The kettle may have a leakage current > 10mA. See rating plate for current value. The device is of class I and MUST therefore be ground-connected, and protection against indirect contact must be established in the permanent installation. As the device may have a high leakage current to dirt, refer to Chapter 707 of the Executive Order on High Voltage: “Particularly reliable protective conductors”.
If a residual current device is used for protection against indirect contact, a type B switch must be used. The residual current circuit breaker must be marked:
Due to switch-on current surges in connection with with the built-in mains filters, it is recommended that
use a short-delay (10ms) type with 100mA tripping current. The device must be fitted with a sheath cable, at least type HO5 RN-F (60245-IEC57). The supply cable is mounted directly in the terminals on the supply separator. Remember to make the protective conductor a little longer than the other conductors, so that it is the last to be torn out in case the cable is pulled too hard. If the kettle is equipped with data collection (consumed kWh and consumed water), the phase sequence must be correct. The display on the kWh meter must not say ‘false’. It is strongly recommended to install overvoltage protection in the fixed installation, so that damage to the electronics unit is avoided by atmospheric discharges and connections in the high voltage network. The back of the device is equipped with a connection for equalization connection. This is marked:

Remember compensating connections for touch-accessible metal parts (2.5m).

– Connection of water supply –

Water supply, both hot and cold water, is connected to the back of the support column. Hot water only in conjunction with spray gun. The supply is dimensioned to provide approx. 30l / min. Maximum water pressure 6 bar ~ 600kPa. A stopcock must be installed on both supplies in the immediate vicinity of the kettle. The jet on the outlet spout can be regulated by replacing the insert so that the jet hits the kettle regardless of the water pressure. If the kettle is equipped with a spray gun, a pipe switch must be fitted in the fixed installation so that back suction in the event of a failure in the water supply is avoided.

– Connection of cooling water –

Cooling is under development.

– Mechanical installation –

Avoid mounting the kettle close to heat-emitting appliances and fryers.
The kettle must have clean air for ventilation of the internal parts with a maximum temperature of 35 ° C. When placing the kettle, make sure that space is needed around it. It must be possible to open the lid completely. There should be space between the kettle and other things for cleaning so that you do not get your fingers or hands pinched when the tilt function is operated. There must also be room for service and maintenance. See the Danish Working Environment Authority’s rules: “Commissioning of machines ABEK 1109, and AT guide B.1.3 Machines and machine systems.” Distance requirements are specified in section 11.3. Adjust the set screws (foot) until the kettle is horizontal. Check with spirit level. When attaching to the floor, pay attention to any membranes or installations in the floor.

– Fastening to the floor –
Mark the holes through the foot, drill the holes that fit the M8 expansion sleeve. It is only necessary to fasten the two outer legs on each column where mounting brackets are attached.

After the kettle has been installed and connected, simple function tests are performed.

– Heat –
Set the temperature to e.g. 100 ° C and turn on the heat, Observe that heating.

– Stirrer –
Switch on the stirrer with e.g. 50 rpm and program 1. Observe that the stirrer is running. Reduce the speed to 20 rpm. Check the switch on the lower arm. The switch must be actuated when the lid is opened. The stirrer should stop when the lid is opened more than 40-50mm.
Adjust if necessary. positioning the switch relative to the cam on the shaft. See section about
maintenance. If the pot is equipped with ‘SlowMix’, the function with the lid open is tested. The stirrer may only run as long as the key is pressed.

– Water –
Select a number of liters of water on the screen and turn on the water. Observe that there’s counting up
on screen.

– Tilting –
Press the respective buttons. The kettle should stop when the button is released, as well as in the lower and highest position. If the kettle’s body is not completely horizontal, the stop point must be adjusted. See section under “maintenance” Check that the switch in connection with the kettle shaft is fully actuated when the pot is horizontal. See evt. adjusting the switch in the “maintenance” section.

– Commissioning –
The kettle can be used when the operating instructions have been read and the kettle tested. As
first, clean the kettle as described in the “cleaning section”.

– Service menues –

The service menus are divided into “User menu” and “Factory menu”. The user menu is with different constants intended for the ordinary user. Different values ​​can be monitored in connection with. with troubleshooting and maintenance. The alarm menu is also accessible. The factory menu contains product-specific information, such as the configuration of the kettle, which the daily user does not have access to.

To get to the service menu, first select the menu at the bottom of the front page:

– User menu –

Here the user has the option to set different constants:

– Page 1 –

Clock: Press the numbers in the right corner for 3 seconds and a submenu will open so that the clock can be set.

Switch off the pot after time:When the pot control has been inactive for the specified period, the control switches itself off. The start button must be switched on again. Enter the desired time in minutes. At setting 0, the function is switched off.

Tilt back, pause: The time the tilt control waits before it tilts back. The time is milliseconds.

Tilt back, driving time:The time the steering is tilted back. The time is milliseconds.

Turn on fans:Test button to function test all fans in connection with. service.

Heat step control:Here the individual constants of the heat steps are set, where 1 is the lowest power and 10 is full power. It is not recommended to adjust these constants without the guidance of the manufacturer.

Flow meter:Constant for flow meter. The number of ml / pulse is set here. The default value is 3.04. The constant is slightly dependent on the current flow and the value can be changed if the flow meter does not show exactly. See electrical diagram for other values.

Reset flowmeter:Pressing the button resets the accumulated value in “Total content”.

Total content (L):The accumulated amount of water that has accumulated in the pot.

Air curtain (optional):Select on the green button. Then select by which
temperature on the bottom of the kettle, the fan for the air curtain must be switched on, eg 100 ° C.

SlowMix speed(additional equipment): Agitator speed when the SlowMix button on the front of the control column is pressed. Can be set to a maximum of 20 rpm.

Test Slowmix:Used in connection with the annual service inspection. Testing of the safety function that monitors the safe speed is not exceeded. When the key is pressed, an excessive speed message is sent to the frequency converter. This will go into error mode and write SAFF in the inverter display. The error will also appear in the alarm menu. To activate the test, hold down the on-screen test button before pressing the SlowMix pushbutton. The SAFF fault can only be reset by switching off the voltage to the kettle at the main switch.

– Page 3 –

Energy consumption, kWh / imp .:Here the meter constant for the kWh meter is set. Number of pulses / kWh. A typical value is 1000 imp./kWh.

Reset energy meter (optional):Press the button and the mounted energy meter will be reset.

PLC software version:The installed version is stated here.

HMI software version:The installed version is stated here.

– Monitoring –

– Temperature –

Here the temperature of the induction inductor can be monitored. When the inductors reach a
temperature of 100 ° C, ventilation starts. If the temperature exceeds a preset temperature, the kettle will shut down to protect the inductors. In that case, the first thing to check should be whether the filters in the ventilation at the bottom should be cleaned. The temperatures on the bottom of the kettle are also monitored. If there is a fault in one of the sensors, an alarm is given in the alarm panel. The generator’s temperatures to be displayed are selected in the top field. If there is only one generator, the option is not present.

– Agitator motor –

The operating modes and status of the motor can be read at the current values. Ventilation of the engine starts when the thermal condition of the engine is at 60%.

Inputs / outputs –

The status of the control inputs and outputs can be monitored. There are light channels active channels.

– Alarms –

All alarms are gathered in the alarm list below. The alarm is listed by date and time. The alarm is acknowledged with the ‘correction’ key. Some alarms will reappear after 5 min if the cause of the alarm is not removed.

– Factory menu –

To enter the factory menu, enter the factory menu password (provided by the manufacturer only) in user settings. The kettle’s configurations are set in the factory menu.

Maximum time water filling:Safety time, the longest time the solenoid valve can be open.

2 generators:Selectable if the pot is equipped with 2 generators.

Gear ratio:Enter gear ratio for agitator gearbox here.
Max. rpm for engine:

With agitator:Activated if the pan is equipped with an agitator.

Control according to food temperature:Is activated if the pan is equipped with a stirrer and therefore has a built-in food temperature sensor.

– Generator –

The number of coils on the generator (s) is selected. On generator 1, all 4 inductors are always selected. On generator 2, 2 or 4 inductors are selected depending on the pot size

– Language –

Languages ​​can be selected on the panel. There is an opportunity for Danish
and english. Click on the flag to select a language

– Warnings and remarks regarding operation –

This appliance is not intended for use by persons (including children) with reduced physical, sensory or mental capacity or lack of experience and knowledge, unless they have been supervised or instructed in the use of the appliance by a person responsible for their safety. Children should be supervised to ensure that they do not play with the product.

The machine presents risks that are not completely eliminated in the design of the machine or with the installation of suitable protection devices:

Slipping or falling:The operator may slip due to water or dirt on the floor.

Combustion:The operator intentionally or unintentionally touches the inside of the pot or hot pot accessories. When the lid is opened on a hot pan, hot steam can flow out and burn your hands. When emptying the kettle, hot contents may spray around.

Scalding:If water in a pan is filled with hot oil, the oil will explode and spray into the room.(1 liter of water turns into 1800 liters of steam!)If you try, a warning pops up and you have to sign to get ahead.

Electric shock:If the electrical parts are operated with voltage connected. The power supply on the supply disconnector should always be disconnected when working close to or with electrical parts.

Chemistry:Contact with chemical substances, such as detergent without the necessary safety precautions. Always see instructions on the products used. Use the recommended protective equipment.

Tipping of load:Lack of support for pot body in connection with. replacement of actuator for tilt. Use of unsuitable equipment in connection with. handling the pot during transport or assembly can lead to dangerous situations.

Squeezing:If the pot is close to the wall or something and the pot is tilted, there may be a chance of getting pinched. For the same reason, there is no automatic tilt, but only as long as the button is held down.

The kettle complies with all applicable EMC and EMF standards and should therefore not interfere with other electronic equipment. Nevertheless, persons with pacemakers or other electronic implants should consult their doctor to ensure that the device does not interfere with the implant.

-Maintenance –

To ensure the greatest possible operational reliability, it is important to maintain the kettle thoroughly. Failing to perform maintenance will void the warranty. It is important for the trouble-free operation of the pan that the grease filters mounted on the underside of the tiltable part as well as the filter under the column are cleaned at regular intervals.

Instruction manual:The instruction maunal must be available.

Nameplate:The nameplate must be intact. If grease has come off the plate, it must be replaced. A ‘spare sign’ is placed on the inside of the door by the supply separator. A new manual and new sign can always be delivered when the serial number on the kettle is stated.

Position of the kettle: Check that the kettle is still horizontal.

The tilt kettle’s buttons:Check that all electric controls / buttons are not defective or loose.

The kettle’s connection: Check protective conductors, both PE connection and compensating connection. Measure the earth connection and check that it corresponds to the requirement in the fixed installation. Check the resistance between the kettle’s body and each column. Check protection against in-direct contact. When dealing with the error-interruptor, it’s measured with tests and the values ​​are noted in the test form. When zeroing, the impedance of the fault loop is measured. If the kettle is equipped with an electrical outlet, check the combined circuit breaker and residual current circuit breaker in the boiler.

The kettle’s condition:Check for leaks. Penetration of water into enclosures / columns. Check the condition of gaskets in doors and at shafts. Tighten vital connections: PE connection, equalizing connections, phase conductors Check condition of grease filters. There must be no openings where air can pass freely. Replace if necessary. grease filters.

– Annual routine –

Screen:Check the overlay on the screen. If there is damage or leaks so that water can penetrate, it must be replaced. Extra screen overlay can be purchased, which can protect the screen in extra harsh environments.

Induction generator:Visual inspection. Check generator condition. Dirt of fans at the end of the generator (Behind cassette with circuit breakers). Check fan for the inductors in the bottom of the kettle. Menu in the service menu in the PLC.

Gear motor for agitator:Visually inspect for leakage. Check the condition of the ventilation hose. Position of hose so that the kettle can tilt without losing oil. Check for noise and vibration during operation. Check terminal box connections.
Check operation of additional fan (Service menu). Check that the stirrer stops when the lid is opened more than 40mm. There must be ‘STO’ (Safe torque off) in the inverter display. The engine is blocked and cannot run.
N.B. The voltage of the motor is NOT switched off.

Tilt system:Check the engine to run smoothly and without noise. Put some grease on the sliding surfaces.

Frequency converter:Tap the converter lightly and observe for loose parts. Check for corrosion on terminals EMC plate etc. Check for deposits of dirt, eventually clean it. Check torque on connections, see wiring diagram. SlowMix speed monitoring. Checked via service menu in PLC. The frequency converter must go into fault mode and show ‘SAFE’ in the display. To reset, disconnect the supply to the inverter on the circuit breaker or supply disconnector.

Water connection:Check for leaks. Correct if necessary. If the kettle is equipped with a spray gun, check the pipe switch in the fixed installation.

– Every 2nd years –

Replace battery in PLC:The battery is only used to back up the built-in clock. Battery type: Panasonic BR2032

– Every 5 years. –

– Repair –

For service on the product, contact the company where the appliance is
bought. Possibly. repairs may only be carried out by a service company authorized by the manufacturer
and with original spare parts. For all inquiries regarding the kettle, the type and serial number must be informed. This can be found on the nameplate. Extra nameplate is located behind door at supply separator. First check the error-interruptor and fuses for the product in the fixed installation.

In the event of troubleshooting with the kettle under voltage, the LAUS rules must be observed. N.B. The kettle’s 24Vdc control voltage is NOT a safety voltage SELF (safety extra low voltage), but a FELV (Functional extra low voltage).
